I have been documenting things with my ex for years now. Does anyone ever feel like there is never going to be a time when I can STOP having to write down everything?

I call it therapy. I'm not sure if it ever stops or if it should ever stop. I know for myself it has helped me clear my mind and come to alot of realizations and decisions about my life. As long as it continues to help you, you should continue writing. Maybe one day you can write a memoir!
